Easy Cottage Pie
I make a lower-calorie version at home, but here's an easy RV recipe:
Cottage pie is a lot like Shepherd's Pie, except it uses beef or poultry instead of lamb. Enjoy!
EASY COTTAGE PIE
Serves 4
Ingredients:
2 cups cubed cooked chicken or turkey
1 medium onion, diced
1 can cream of chicken or mushroom condensed soup
¼ cup milk
Mrs. Dash seasoning
1 can mixed vegetables, drained
2 cups leftover or prepared mashed potatoes
¼ cup grated Parmesan cheese
Directions:
Preheat oven to 450°F. Combine the chicken, onion, condensed soup, milk, vegetables, and seasoning. Pour mixture into a 2-quart baking pan. Top mixture with the mashed potatoes, spreading evenly. Sprinkle with the Parmesan cheese.
Bake at 450° for 25 minutes or until cheese begins to brown. If you have a convection oven, follow the manufacturer's instructions for baking a casserole then brown the cheese/mashed potatoes using the broil feature (1 minute should do it).
